Based on the performance numbers we're seeing from reliable reviewers, as expected, the 7900 XTX is the top performer amongst the three siblings. However, they are all strong cards, as even the 7900 GRE is able to produce triple figure FPS numbers in many tests including Far Cry 6, Forza Horizon 5, Rainbow Six Siege and Red Dead Redemption 2 at 1440p.
When using the 7900 GRE as the baseline (100%), it appeared that the 7900 XT was doing 13% better in 1080p tests, 16% better in 1440p tests, and 21% better in 4K tests. With the 7900 XTX, it did 24% better in 1080p tests, 30% better in 1440p tests, and 43% better in 4K tests.

Our RMe Series is a great start for any of these GPUs. If you'd like a PSU that is easier to connect cables to (for initial install and future additions), our innovative RMx SHIFT Series is the perfect choice with its patent-pending side cable interface. If you're looking for a PSU with top-notch Platinum efficiency and the ability for monitoring PSU performance via iCUE, our HXi Series is suited for that.
All three 7900 GPUs are great performers for gaming - it solely comes down to your budget. If you are able to afford the 7900 XTX or XT, they would be the recommended choice as they'll provide you with higher FPS and provide a tad more futureproofing. If your budget is solely locked around the 7900 GRE's pricing, it is still very much a viable choice as it holds strong performance numbers.
